This a an Everyplate (Everyplate com) recipe of Pork Schiznel using chicken breasts instead of pork loin. Both versions were very easy to make and tasty.
Ingredients.
2 chicken breasts
1/4 cup flour
1 egg
1/4 cup panko breadcrumbs
salt and pepper to taste
olive oil
chicken or turkey gravy
Place one chicken breast between 2 pieces of wax paper or plastic wrap. Using a meat tenderizing hammer, pound breast thin and tender about 1/8 inch thickness. Repeat with other chicken breast.
Using 3 bowls, prepare the coatings. Bowl 1 is the flour, bowl 2 is the egg beaten with a teaspoonful of water and bowl 3 is the panko breadctumbs. Salt and pepper each bowl to taste preference. Take 1 chicken breast and ciat with flour from bowl 1, then drench in egg batter followed by coating with panko breadcrumbs. Repeat with second chicken breast
In skillet over medium heat, bring a dollop of olive oil to a temperature where a pinch of flour sizzles. Place 1 or both breasts in pan and cook over low to medium heat til fully cooked a golden brown flipping halfway through.
Plate each breast serving with mashed potatoes and peas. Top each breast and potatoes with chicken or turkey gravy.
This recipe can be used with any meat (beef, turkey, rabbit, veal, etc ) using a suitable gravy flavor. The variety is limited by your own tastes.
