Ingredients for 2 servings 520 calories. 10 min prep and ready in 35 minutes
1 medium onion
2 cloves of garlic (or enough to taste)
1 medium tomatoes
italian seasoning
2 tablespoonfuls tomato paste
9 ounces chicken ( or preference) sausage
3 tablespoonfuls on Parmesan cheese
2.5 ounces Israeli couscous
2 tablespoonfuls chicken stock
Virgin olive oil
Finely chop onion to get 3/4 cup total. Peel and finely chop garlic. Cut tomato into a medium dice.
Medium- high heat, heat a drizzle of oil. Add onion with salt and pepper to taste cooking until softened 4-5 minutes. Remove sausage from casing. Add sausage, garlic and Italian seasoning to taste ( approximately 1.5 teaspoonful). Cook browning the chicken while breaking into smaller pieces about 4-6 minutes.
Add tomatoes and paste stirring often until tomatoes slightly broken down 2-3 minutes. Stir in 2.5 cups water, stock, salt and pepper. Bring to a boil then add couscous. Cook, stirring often until couscous al dented about 8-10 minutes. If too thick and splashes of water. Taste and season with salt and pepper to taste.
Divide into bowls and sprinkle with cheese. Can sprinkle with fresh basil or parsley.
